Fit Fathers Black Bean Burrito Special

IMG_6147Who doesn’t love the fresh combination of steamed veggies, dirty rice, and black beans tucked in an all-natural wrap? Not only are burritos filling, but they are also packed with protein, fiber, and complex carbs. Fit Fathers afternoon lunch special will keep you satiated and energized four hours. The complete package consists of a burrito, sweet potatoes, and an oil-free veggie stir-fry.  Ingredients:

Burrito: Ezekiel Bread Wraps, Avocados, Brown Rice, Lettuce, Black Beans, Tomatoes, Onions, Taco Sauce, Bell Peppers, Garlic Powder, Himalayan Sea Salt, Vegit, and Mushrooms

Stir-Fry: Millet, Peppers, Cabbage, Sweat Potatoes, Carrots, Garlic Powder, Himalayan Sea Salt, Vegit, Onions, Nutritional Yeast, Bragg Liquid Aminos, and Broccoli

The evening before you plan to make your meal soak the black beans, brown rice, and millet in water overnight to release the Phytic Acid which binds to calcium and makes it unstable. This also cleans and removes any environmental residue.

Prepare your brown rice in a rice cooker, boil your millet until soft and fluffy, and cook your black beans. If you use canned beans make sure to rinse them thoroughly to remove any unnecessary sodium and preservatives. Simultaneously steam a few sweet potatoes.

In a wok add a half-cup of water (low heat), the peppers, and onions. After 5 minutes throw in the rice, beans, and mushrooms. Sprinkle with your seasonings and simmer for 10 minutes. Heat one side of your wraps in a non-stick pan. Remove, fill with one scoop of the mixture (on the heated side) along with two slices of avocado. Wrap nicely (tuck the ends) and place in the pan for 3 to 5 minutes or until crispy. Remove and top with the taco sauce, tomatoes, and lettuce.

If you are a multitasker place a second wok or pan on low heat and add a half-cup of water, the cabbage (sliced in strips), broccoli carrots, onions, and peppers. Simmer for 10 minutes before mixing in the millet (can be replaced with whole grain of choice such as quinoa). Spray with the Bragg Liquid Aminos and then add the remaining seasonings. Simmer for another 5 minutes. You can serve the sweet potatoes separately or cut up in the stir-fry.
