Here you have plantains simmering in water and only water (5 minutes each side). They are sweet, soft and pure. Most cooks nutritionally ruin this island enjoyment by deep-frying them and then adding powdered sugars. But there is no need for lathering plantains in fat soaked and endothelia damaging oils.
