Chickpea & Tofu Coconut Thai Curry: Vegan Cyborg Recipe

Tonight, we head to the Far East for a tasty curry meal from Thailand. Well, almost. To start, steam two cups of cauliflower, a handful of chopped carrots and a few sliced Japanese sweet potatoes. After they became soft, toss in a wok with fresh onions, half a cup of chickpeas, and a few splashes of water. Next, add “organic extra firm” tofu chunks and mix together. Pour in the Coconut Thai Curry and let simmer down like Bob Marley for 15 minutes. Serve over brown rice or your favorite Asian noodle and enjoy!

5th Annual Nomadic Journey: Life Rediscovery in Vietnam

The perseverance of the Vietnamese people is unwavering, their spirituality is sincere, they are hyperactive in terms of fitness, and the plant-based foods they consume are pure and divine. Naturally, I chose a week-long mountain biking tour with Cambodia Cycling to rediscover life while riding from Saigon (Ho Chi Minh City) to Vung Tau beach city. Continue to travel wide and never rest on your laurels.

 

After a 22-hour flight, the plan was detailed but exciting. Once breakfast was complete, we transferred out of the bustling city of Ho Chi Minh to Tan Phu Trung village then rode through the rubber tree plantation to the Cu Chi Tunnels, dug during the Vietnam War. Next, we pedaled from Tan Thanh to Ngai Giao then to Xuyen Moc and Binh Chau Hot Springs to have a mud bath. The team cycled along the coast to Long Hai in transit to Vung Tau Beach City. The last leg featured a coastal view while finishing with a climb up to Nho Mountain to enjoy the sea from inside the arm of the famous Jesus statue. Vegan Travel: Broccoli Revolution in Bangkok, Thailand

Oh wow. If you ever make it to Bangkok please go to the most amazing Vegan Restaurant I have ever visited. And I’ve eaten at more than 200 places globally. Not only is the food out of this world, organic and natural, but the eclectic vibe is energizing and features live new artists. After eating noodles all week in Vietnam I was telling my fellow Fit Father Horace Ward that when we get to Thailand I’m going searching for a burger! But a quinoa, broccoli burger on a black whole grain bun found me first. Yep, Broccoli Revolution should definitely go on your plant-based bucket list. [Read more…]
