Chickpea & Tofu Coconut Thai Curry: Vegan Cyborg Recipe

Tonight, we head to the Far East for a tasty curry meal from Thailand. Well, almost. To start, steam two cups of cauliflower, a handful of chopped carrots and a few sliced Japanese sweet potatoes. After they became soft, toss in a wok with fresh onions, half a cup of chickpeas, and a few splashes of water. Next, add “organic extra firm” tofu chunks and mix together. Pour in the Coconut Thai Curry and let simmer down like Bob Marley for 15 minutes. Serve over brown rice or your favorite Asian noodle and enjoy!

The Ethiopian Experience: Trekking the Highlands of Lalibela

Selam, and welcome to “the origin,” the African nation that has never been colonized by Europeans. Lookup “The Battle of Adwa” where King Menelik II defeated the Italians in an epic sequence of historical consequence. Finally, after years of research, readings, teachings, and listening to roots reggae rhythms epitomizing The Promised Land, I took the requisite steps needed for a transformative Ethiopian experience as part of my Annual Nomadic Journey in Addis Ababa and Lalibela.

I ventured to Ethiopia for its strength, Abyssinian culture, veggie injera meals, traditional Eskista shoulder dance up close, and to breathe with deep spirit from the highlands of Lalibela. I began the excursion upon landing into Addis Ababa, the capital and largest city of Ethiopia. I enjoyed many of the historical sites, including the National Museum of Ethiopia, Ethiopian National Theatre, Ethnological Museum, the Red Terror Martyr’s Museum, and Menelik Palace in the Entoto Hills. The Historic Kidist Selassie Cathedral is the highest-ranking Ethiopian Orthodox Tewahedo Church in the city. Sarcastically, I was also looking for freedom fighting singer Teddy Afro, the Bob Marley of Ethiopia. Listen to any of his classics, and you will become an instant devotee. Trust me!

Fit Fathers 6th Annual Nomadic Journey: Kenya’s Maasai Mara & the Balance of Nature

Jambo! It’s the Swahili greeting I heard and repeated regularly throughout my 2-week journey in the Motherland to experience the beauty of nature in its purest and most divine form. The 6th Nomadic Journey brought me to the lands of Africa to spend time with the wild in their natural habitat within the Maasai Mara National Reserve in Southwest Kenya. These journeys are where I venture solo like a rover to rediscover life, disconnect from addictive American culture, and explore deeper consciousness and spiritual freedom.

As a frequent traveler, I always fly with the same airline alliance to earn miles, upgrades, respectable customer services, etc. After traveling almost 3-million miles with the Star Alliance, I’ve received exceptional treatment. Arrival to Nairobi took place on Jamhuri Day, which is a national holiday celebrated on December 12th to commemorate Kenya’s independence. As you can imagine, people were rejoicing across the country.

Healthy Culinary Experiences in Africa

Here are some of the amazing and traditional vegan foods we enjoyed in Kenya, Egypt and Ethiopia during the 6th Annual Nomadic Journey. Keep in mind that the staple food for mostly every indigenous culture is a legume (bean) or grain.

Our favorite culinary experiences included the Ethiopian veggie injera dish with lentils and cabbage and Egypt’s Koshari national dish which was divine. Koshari is a super meal made from macaroni noodles, lentils, rice, chickpeas and spiced tomato sauce.
