Fit Fathers Fall Butternut Squash and Kale Soup

Eating clean is our daily theme. So before a 4-mile run we prepared this Fall Butternut Squash and Kale Soup and an organic Kale Salad with seasoned tofu chunks. The soup requires kale, potatoes, onions and butternut squash which you first sauté and season in a pot. Then add water and simmer until soft. Next pour the contents into your Vitamix for blending. Pour back into the pot and continue seasoning to your liking. There’s nothing like healing foods that energize!

It’s not accidental that kids start cooking fresh, healthy meals for the family on a daily basis. They watch and emulate everything their parents or peers do. If deep, fried chicken is your thing then that’s what they will reciprocate. However, it won’t give them the tools, education and resources needed to extend their lives. Salads, fruits, cruciferous green veggies and plant-based proteins is our recipe for success.

With that, this weekend’s family visit from my mother and the crew (various nieces, nephews, sisters and cousins) was culminated by a magnificent vegan dinner prepared by my 12-year old daughter Mikaiya and 9-year old niece Mikayla (which I am proud to have named as well). Using her new vegan cookbook, the two made a whole grain penne pasta with homemade pesto sauce blended in the Vitamix using Arugula, lemon juice, avocado, basil, pine nuts, Brazil nuts, garlic and sea salt. The salad included 7 different veggies and the freshly baked scones tasted like heaven. Hopefully they stick with this passion and elevate to the next level.

After dinner entertainment came from my youngest Kaiyana who played some of her favorites music notes from the violin. The next morning we all woke up to fresh fruit sliced and diced by the little vegan chefs. What a magnificent few days!

Thanks to resident chef Melisa Montgomery we now have a simple snack solution for dads on the run. Our Natural Born Hummus is great for Meatless Monday and perfect for all days of the week. In your Vitamix or blender add 2 cups of chickpeas, 1/3 cup of almond milk, a few squirts of fresh lemon, red pepper flakes, Himalayan sea salt, garlic and pepper. Mix to perfection and chill for an hour. Serve with your favorite raw veggies or blue chips from Garden of Eatin’. Super easy!

photoThis refreshing all fruit and natural smoothie is the perfect mid afternoon snack to satisfy your appetite and restore energy. Our mango lassi delight is also packed with protein from the chia seeds, iron from the pumpkin seeds, and omega 3 is obtained from the flaxseeds.

Ingredients

2 organic mangos    ice
vanilla extract          1 organic banana
3 dates                       flaxseeds
coconut milk            chia seeds
pumpkin seeds        mango soy yogurt

Blend well in your Vitamix or blender of choice and serve over ice. Drink clean!

Clean Grren Power Protein ShakeGreen shakes oftentimes get a bad rap just for coloring alone, not to mention most individuals are hesitant to readjust their taste buds. Yet, these drinks are potent, nutritional and can be made to taste just as good as a fruit shake or better.

In your Vitamix, add coconut water, ice, banana, pineapple, broccoli florets, flaxseeds, oranges and kale leaves. Blend well and give it a go! Drink at least 45-minutes before your workout to absorb the nutrients and begin converting the mixture into glucose for fuel. Replenish immediately after exercising so your body can begin the healing process.
